Chicken, Shrimp or Scallops – Tequila Based Marinade Recipe:
Makes: 1-1/2 pounds shrimp, sea scallops or chicken.
Marinate for: 60 – 90 minutes for poultry, 30 minutes for seafood.
Ingredients:
1/4 c. vegetable oil
3 Tbs. fresh lime juice
1 1/2 tsp. grated lime peel
3 Tbs. tequila
2 Tbs. Grand Marnier, Cointreau or triple sec
1 lg. jalapeño or serrano pepper, seeded, minced
2 tsp. chili powder
1 tsp. sugar
1/2 tsp. kosher salt
How to Make It?
Mix all ingredients in a bowl.
Let the marinade stand for 15 minutes.
Cover the bowl and refrigerate for at least 30 minutes.
Tip: If you’d like to turn your marinade into a sauce, boil the remaining marinade in a small saucepan for one minute.
Chicken or Pork – A Beer based marinade recipe
Makes: 2 lbs. chicken or pork.
Marinate for: 2-3 hour at room temperature or overnight in the fridge.
Ingredients:
1 tsp. Tabasco
3 Tbs. apple cider vinegar
12 oz. favorite beer – experiment here as different beers will add different flavors
1 Tbs. coarse ground mustard
1 Tbs. Worcestershire sauce
1/2 c. soy sauce
2 tsp. minced garlic
Sea salt
Fresh ground pepper
How to Make It?
Mix the ingredients.
Marinate your meat for 2-3 hours at room temp or overnight in the fridge
Asian Marinade Recipe – For Chicken, Turkey, Pork Cutlets or Seafood
Makes: 1-1/2 to 2 lbs
Marinate for: Four hours for meats and one hour for seafood in the refrigerator.
Ingredients:
3 Tbs. low sodium soy sauce
2 Tbs. sake or rice wine – you can also try japanese plum wine
1 Tbs. fresh minced garlic
1 tsp. dried chili flakes or hot chili paste (Siracha works really well. You can use five to six pieces smashed fresh ginger if you don’t have hot sauce or chili paste)
1 Tbs. sesame oil or extra virgin olive oil or a mix of the two
How to Make It?
Mix together all the ingredients in a bowl.
Caribbean Jerk Marinade Recipe – Chicken or Pork
Makes: 5 lbs.
Marinate for: 24 – 48 hours in airtight bags in the refrigerator.
Ingredients:
2 c. finely chopped scallion
2 Habanero chilies, seeded and minced (don’t touch your eyes when handling habeneros)
2 Tbs. soy sauce
2 Tbs. fresh juice of lime
5 tsp. ground allspice
3 tsp. English-style dry mustard
2 bay leaves, center ribs discarded and the leaves crumbled
2 fresh garlic cloves, chopped
1 Tbs. salt
2 tsp. sugar
1-1/2 tsp. dried thyme, crumbled
1 tsp. cinnamin
How to Make it?
Combine all ingredients in a food processor or use a blender to puree.
Indian Tandoori Marinade Recipe- Anything but Beef
Makes: 5 lbs.
Marinating time: Four hours at room temperature or refrigerated overnight.
Ingredients:
2 cloves fresh garlic
1 Tbs. fresh ginger root – chopped
1 tsp. ground roasted cumin seeds
1/2 tsp. ground cardamom
1/2 tsp. red pepper flakes
1 tsp. tandoori coloring or 1 Tbs. paprika
1/2 c. plain yogurt – regular yogurt not greek yogurt
How to make it?
Put all the ingredients of the marinade into a blender or food processor and blend until smooth.
