Balsamic Grilled Peaches with Vanilla Ice Cream
Yield: 4 servings
Ingredients
4 peaches – make sure they are firm with just a little bit of softness. A too-soft peach will disintegrate on the grill. A little tanginess is okay since we are adding ice cream later.
½ cup agave nectar. You may also substitute honey.
¼ cup balsamic vinegar
1 dash vanilla extract (optional)
1 pint vanilla bean ice cream
Directions
Halve the peaches and pit them. Take a small bowl and combine the agave nectar, vanilla extract and balsamic vinegar.
Heat your grill to medium.
Brush the glaze on the face of the peaches and place the peaches face-down on the grill.
Grill the peaches for three-five minutes or until there are solid grill marks. The grilled peaches should be tender but not falling apart.
Pull the peaches off the grill and let them rest for a minute or two. Place them on a platter and drizzle with the remaining glaze. You may also drizzle them with honey.
Scoop some vanilla ice cream into the cavity of each peach.
Serve warm before that ice cream melts!
This grilled peaches recipe will lead to a warm and succulent dessert that is a great finish to your summer barbecue.
Variation – you can slice the peaches and grill all sides then use the grilled peaches to garnish your bowl of vanilla ice cream, or enjoy them without any ice cream at all! Make sure to brush all cut sides of the peaches with the agave nectar and balsamic mixture.
